 Ingredients

  • 4 medium potatoes, peeled and cubed
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 stalk celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper to taste

Optional: chopped pickles or dill


 

Instructions

  1. Place the cubed potatoes in a pot, cover them with water, add a pinch of salt, and bring to a boil over medium heat. Cook for 10–12 minutes until tender but not mushy, then drain and let cool.

  2. In a large bowl, mix the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
