Egyptian Melt-in-Your-Mouth Butter Cookies – Simple, Rich & Delicious!

Ghorayba (غريبة) is a classic Middle Eastern and North African cookie, loved for its buttery, tender texture that crumbles beautifully with every bite. These cookies are made with just three main ingredients: butter, powdered sugar, and flour, making them incredibly easy to prepare.

In Egypt, Ghorayba is a must-have during Eid celebrations, often served alongside Kahk and Eid Biscuits. They are sometimes decorated with a single almond or pistachio on top, adding a crunchy contrast to the soft texture.

🍪 Ingredients

Main Ingredients:

  • 2 cups all-purpose flour (sifted)
  • 1 cup unsalted butter (softened, at room temperature)
  • ½ cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 1 pinch salt

For Decoration (Optional):

  • Whole almonds, pistachios, or hazelnuts (for topping)

👨‍🍳 Instructions

Step 1: Prepare the Dough

1️⃣ In a large bowl, beat butter and powdered sugar until light and fluffy (about 3-5 minutes).
2️⃣ Add vanilla and a pinch of salt, then gradually mix in the sifted flour.
3️⃣ Knead gently until a soft, smooth dough forms. If too dry, add 1 tbsp melted butter.
4️⃣ Cover the dough and let it rest for 30 minutes.

Step 2: Shape the Cookies

5️⃣ Preheat oven to 160°C (325°F).
6️⃣ Take small pieces of dough, roll them into balls or finger shapes.
7️⃣ Press an almond or pistachio in the center of each cookie (optional).

Step 3: Bake the Ghorayba

8️⃣ Arrange cookies on a lined baking tray (no need to grease, as they are buttery).
9️⃣ Bake for 10-12 minutes, until set but still pale (they should not turn brown).
